Flame Tree has a core number of key staff employed on a full-time basis and a further group of staff that work for us on a permanent, part-time basis. We also have a large group of casual staff, whom we employ as required. The full complement of staff is likely to be on board for activities such as a major concert or plated dinner.

Troy Reid
General Manager
Troy brings a unique combination of organisation and creative flair to his role as General Manager. Starting his training in the Royal New Zealand Navy, Troy went on to work in a series of New Zealand and London’s finest restaurants. Working alongside Michelin starred chefs has left Troy with a passion for combining originality, stimulation, taste and texture.  Since London, he has been Hamilton based with Flame Tree’s parent company overseeing Waikato Stadium and Claudelands Event Centre as Executive Chef.  Now Auckland based, with a hands-on approach, you will often see Troy at functions and events.

Kate Williams
Operations Manager
Kate comes from a background of large events.  She joined Flame Tree’s parent company in 2009 to implement the catering for major events including corporate and retail.  Her background in logistics has progressed to Operations Manager for Flame Tree.  Whilst managing our impact events, Kate is involved in overseeing the day-to-day operations and systems within the business.

Carlos Atkinson
Head Chef
Our Head Chef oversees our kitchen staff across 3 kitchens.  With 20 years experience, he worked with our General Manager back in London in 1996 and has since owned his own restaurant.  With Flame Tree, Carlos is now engaged in menu design and has a particular focus on plated dinners.

Phil Christou
Sales and Key Account Manager
Phil comes from a restaurant background with 20 years experience both front and back of house.  Having owned and managed his own restaurant, he is well versed the the food business and managing client expectations.  His transition to catering has brought with him a wealth of experience and allows him to focus on client liaison and key-account management.

Lawrence Leow
Food and Beverage Manager
Lawrence has recently joined us from an extensive hotel background.  His experience in managing multiple functions across multiple venues comes in handy at Flame Tree.  Lawrence oversees the front-of-house operations including staffing and logistics.  He has built a strong supervisor team who work closely to deliver every function to the highest standard.
